I have always found the sweeping brush and the mop to be quite useful multi-function tools.

First use to clean up terrace,
Secondly throw in general direction of offending dogs.

If all else has failed this could well help them to get the message.........

We had pitbull crosses and all sorts of dangerous things turning up ,quite worrying when you have small kids so I used the lead shot system ,this is propelled via a shotgun and is extremely effective!!, if you dont have access to one of these complain to the Guardia ,they will then come out with a vet and put them all down!! Ive seen it happen.If the dogs have owners I would give them the courtesy of a warning first whichever method you go for .

We use a spray called DefenDog, which we buy here in Spain, it's a Spanish product. It doesn't always work.

Only problem being they (the guardia or dog warden, or whoever) are sometimes understandably reluctant to commit to come out if you can't (understandably) guarantee to know when the b****y dogs are going to make their presence felt....

There's a good website (ignore the horrible format, the menu is on the right hand side -took me a while to find it), http://www.dogbreedinfo.com/articles/whybaddog.html, with tonnes of resources about dogs and dog behaviour.

Cesar Millan's show 'The dog whisperer' is also very interesting, but more in an entertaining way than educational.

If you read the site and find it interesting I suggest you go to the library and try to find books on dog behaviour, you might have to buy them though, it's quite a niche topic.

So you suggest the original poster spends weeks reading up then giving feral dogs lessons on where to pee!!! No wonder the Spanish think giris are nuts

I got the impression it was the OP's own dogs. As for the reading up, having dogs and *not* taking the time to understand their behaviour seems the nuttier thing to do. The idea would of course to be to use some stop gap measure in the mean time, but for a long term solution it would be time well spent.
