Default Cochinillos (Lechon)

My four year old convinced me to buy after spying them in the local butchers (yes, they do look like they are sleeping). Ended up buying a few for having a "barbecue". Dug a hole in the garden, burnt wood till charcoal, little piglets stuffed with apples, and ginger, a slosh of sherry and wrapped in foil. Thrown into said hole, and buried for around six hours. Guests appeared. And boy was it good!
Anyone else have a good cooking recipe? (Or maybe can't bring themselves to buy one?).
