I use masmovil http://www.masmovil.es/en/
quite reasonable they actually operate on the Orange system so you need to ensure you have their coverage. I have used them for data now on visits for a while mainly for Skype without any problems.

Vodafone offers "smart" plans Pay as you go that are pretty reasonable:
Smart 8 - 500MB, 20 min voice, 20 Texts for €8 + IVA
Smart 16 - 1.5GB, 100 minutes voice, unlimited texts for €16 + IVA
You can walk into any Vodafone shop and get a SIM in a few minutes and away you go...
We found PayG to be a lot better value than a contract (presuming you already have a phone that is not locked to any provider).
You can pay whenever you need it rather than paying a monthly charge whether you use it or not.
Obviously there are other providers, but Vodafone has pretty good coverage in Spain.

In America a Virgin sim will probably be the best, can't help you with Canada though, probably cheaper getting a sim from US and Canada otherwise you will get dinged for roaming charges.
