From reading many posts of people trying for British Citizenship based on parents citizenship (where the parents history is complicated to say the least), getting an Ancestry visa seems way less...

Goodness.... 2.5 years waiting for a birth certificate! Looking back at your earlier posts it would appear you qualified for an Ancestry Visa (grandfather Scottish) .

Wonder what caused the delay?

Your mother was born and lived all her life in South Africa. So she was British by descent (i.e not born in UK but of British parent).

Therefore if YOU were also born in South Africa she could not...
