We've also got a dog (Ozzie the Weimaraner) with a really dodgy tummy, to the extent that he's always been about a third underweight no matter what we did. Since we arrived in Australia...

Don't worry, exactly the same thing happened to us - still got our visas through in less than two months! If you do end up corresponding with them about it, just make sure you're suitably apologetic....

It is indeed 12 months from date of med or PCC (whichever earliest) but my understanding is, worst case scenario you could always get the meds and PCCs done again if you run out of time - costly, but...
