So is it safe to open an account ... transfer the funds (which will include the proceeds for the sale of my house) into that account and then just keep it there (not transferring to spouses account)?

No tbh I don't know, it looks like on the I-485 that she is covered by my AOS. I do know that her AOS is purely dependant upon mine ie if I get refused so does she.

Thankyou Jeff I have done just that. K2 Visa's cover dependants up to their 21st Birthday and I have been assured she can apply for AOS even though the likelyhood is that we will not be married...
