If you do not have a company that is willing to sponsor a work visa for you, you may be best off getting a tourist visa, which will generally allow you in the country for a maximum of 3 months....

You could try asking the restaurant owners and staff at Les 5 Sens (the 5 senses), a French restaurant near Nanjing University. It is at 52-1 Hankou Lu. It is a small restaurant with friendly owners...
