Not in all cases.

If it is for example your original birth or marriage certificate signed by the registrar then NO. It goes directly to FCO for apostile.

If you have photocopy of your degree...

To be honest its nothing complex. I have done it myself and got three documents from UAE embassy yesterday only.

Apart from tax issues, have you given a consideration to hiring a car for a month instead of keeping a car idle for whole year -30 days without usage+road tax+insurance. And only if the car starts OK...

They have no business seeing your last pay slip. For obvious reasons they will be taking references from you from your past employer, thats sufficient. Tell them its not acceptable.
