I checked with my wife, I've clearly been mistaken with the name of the visa. We are going down the IV route not the K3.

Looks like the answer is not to plan for travel and wait...

I'm currently in the process of applying for a K3 visa to move to Texas where my wife currently lives. We have recently been approved for the I-130.
