I used undated photos and it wasn't an issue.

What is a good idea though is to have an index listing the photos, with the event depicted and the appx date.

I've never understood why the K1 is classed as a non immigrant visa.

Is it a legal requirement of the K1 process that a person granted a K1 (the beneficiary?) adjust status within a certain period...

For processing times, last I heard (early 2014) the K1s were taking about 2 or 3 months quicker than an immigrant CR-1 but there are obviously exceptions to that.
