Hoi An in Shangri-La is good. Not cheap, but I've never had a bad meal there. Voi is the one on the Palm. Pricey and I have yet to eat there, but Patsy rates it. There's a branch of the AD Hanoi in the little food court at Dragonmart, or there used to be. They were supposed to be opening on the Palm too, but that doesn't appear to have happened.
It's a shame there aren't any mid-range Vietnamese places in Dubai.

Seem to remember my first night in Dubai when visiting was in the Shangri-Helmet and they served me a fry up the following morning with chicken sausage and beef bacon so now I'm unsure...
