Turkey is a pain to do well. I've always preferred Goose as it's more traditional what with Turkey coming from the Americans only a few hundred years ago.

Roast pork always meets with my approval but it's more a regular sunday affair than a special Yuletide feast

autonomy, how could you...it's illegal to do anything to swans, though, isn't it...?

Only the Queen is allowed to kill (and I assume) eat a swan (I think).

Ducks and Geese look nice too! (But taste good...)

I've never tried it but have a connection who could probably get me one...not that I would know what to do with it!

I'm going to China in the New Year so I'll probably eat dogs, cats, swans, hamsters, snakes and then really debase myself with a big mac or something disgusting like that

Surprises me that some entrepreneur in Dubai hasn't set up a swan farm to cater for the Jumeirah Janes: Swan for Xmas has got to be the ultimate one-upmanship.

Some tips for a juicy tasty turkey...which is almost always bland cooked the traditional way.

Not that you need any help/hints

Defrost in a brine solution (just bottled water, to your taste)
Thyme, crushed black pepper corns a large grated onion and salt to taste.

Leave for a few hours but drain on a rack at least 2hours before putting in the oven.
After draining rub with proper butter, stuff under skin with stuffing.
Lace with bacon etc. etc.


Don't throw away any of the liquid gold from baking in the bag

This is good gravy.

Really miss M&S Sage and chestnut stuffing.

Like you i fancy a nice roast pork with crackling but DH reckons there is not a pig farm insight and he figures there might be dogs in the pack from Asia.
