Does that include the (disused I think) Ongar-Epping branch?
ISTR that the longest-extending line is the Metropolitan, that goes 30
miles or so northwest from Central London.
In Paris, the longest line is the 13 (Châtillon to Saint-Denis and
Asnières), over 22 km, folowed closely by Line 8.
The shortest is Line 3bis: 1,2 km and 4 stations!

To Amersham, which is probably the furthest point out from
central London

Paradoxically, it is one of the longer distances between two stations in
central London.

IIRC the Central Line is indeed the longest in terms of possible end-to-end
journey - West Ruislip to Epping.

But, strangely enough, mileage on the Underground is stillmeasured from
Ongar!

It gained that record when taken over from BR in 1994, prior to which the
East London Line was shortest.

What's the "longest [...] possible end-to-end journey" on the Circle Line?

But the tracks are still there, if I'm not mistaken? Might they see
trains again one day?

Not commercially but the railway has been acquired by a railway
preservation society who are running it as a tourist attraction with
limited sunday service
