easy one to begin with

Chorizo with Hake (or equivalent white fish)

1 green peppers diced
1 onion sliced
1 large chorizo sliced (proper one - none of these imitations will do!)
2 gloves of garlic - sliced
1tsp paprika
1.5k of waxy potatoes sliced in half on the cross section.
Glass of whitewine
4 x 200g fillets of Hake
Salt and Pepper

Fry onion in a glug of olive oil when soft add peppers and garlic fry until soft add paprika and glass of wine and cook down until wine evaporated - add potatoes and pour over water to just cover - cook for about 10 minutes or until pots are nearly cooked - add hake on top and put lid on for about 7 minutes or a little longer - it depends on how thick the flish is.

Spaghetti Bolognaise (my family receipe who are from the South of Italy)

1 large onion chopped
250g beef mince
250g pork mince
2 x 700g jar of passata
1tbsp tom puree
large glass of white wine
salt and pepper

NO GARLIC!

Fry onion in olive oil until soft add both mince and fry until brown - add rest of ingredients and put onto very low simmer for at least 2 hours - sauce should not be too thick

Further use of sauce in lasagna

1 large ball of fresh mozarella
bowl of finely grated parmesan (must be the real stuff)
lasagna sheets (ones you precook - not those horrible dried things!)
4 hard boiled eggs chopped

first put in a bit of sauce on bottom of dish - add lasagna sheets and top with sauce to cover a sprinkling of parmesa and some mozarella - continue each layer like this but in about the third one sprinkle in the chopped egg. Lasagna should be deep - end with cheese and meat sauce - cover with foil and cook on gas 200c for about 30 minutes if using straight away otherwise it can take up to an hour if cooking from cold

Fish or meat grilled

4 tablespoons of Thai Fish Sauce
1 Tablespoon of water
tsp of sugar
Fresh chopped coriander
Fresh chopped hot chilli peppers
Fresh chopped 4 cloves of garlic
Put all in a cereal bowl, leave to marinate for a couple of hours.
Rice
Fresh assortment of steamed vegies.

Serve up and pour a few spoonfuls of sauce over it. Tasty and low fat.

No.

Marinate with the stilton and onion soup. That'll be nice.

For beef steaks try worcestershire sauce pour in a shallow dish with mixed herbs keep turning the steak in it a couple of time, leave for at least an hour then pop on the barbie. It gives a rather intense flavour and goes well will veg N rice

You live in Italy dont they have any over there? There's bound to be one with tomatoes (mafia fruit ), onions or Parmasan.

Got another one; this was my dinner tonight:

Cut an avocado in half (I bought ONE of those )
Take the stone out
Pour olive oil and balsamic vinegar into the pit where the stone was
Season with salt and pepper

Eat with a spoon

I lied:

Mafia fruit, onion and Parmesan marinade:

Chop some onions
Sweat the onions in a pan
Pour some Passata (Mafia fruit) into the pan and simmer
Grate some parmesan into it

Use it

My easiest fave recipe is this one:

2 'restaurant-cut' fillets of salmon (6oz each)
1 tin diced tomatoes
seasonings

Put the 2 salmon fillets into a microwave safe dish (with sides) and cover with the tomatoes (take them out of the tin first, Jack ) and add seasonings. Cook in the microwave on high for 20 minutes. Serve with long-grain rice and green beans. Delish!

Sorry it's not a marinade... those take way too much time and effort!
