serves 6 , prep time 10 mins, cooking time 1hr 20 mins + resting time
2 tbsp olive oil
12 chicken thighs /drums
1 large onion , peeled & chopped
2 red peppers cut into wedges
2 chopped garlic cloves
1/2 - 1tsp paprika
1/2 - 1tsp cumin
100g/ 14oz long grain rice
570ml/ 1pt tomato sauce (see below)
850 ml/ 1 1/2 pts chicken stock
spring of thyme
390g chorizo , sliced
3 ripe tomatoes , roughly chopped
2 tbspd rough chop basil or parsley
heat 1 tbsp of oil, cook chicken, & set aside
pour fat away, heat remaining oil, cook onion, & peppers til soft.
add garlic & spices, cook for 1-2 mins , add rice & cook stirring for 2-3 mins
add tom sauce, stock, thyme, & chirizo.
season & stir
add chix, turn up heat & bring to boil, stir well,
cover, reduce heat to low, cook for 30-40 mins till all liquid has been absorbed, stir occasionally
turn off heat , scatter toms, parsley or basil over serve
you can also add a tin of drained borlotti beans or chick peas too (add at same time as coked chicken.)
tomato sauce
makes approx 700mls
1 tin chopped toms
2 tbsp tom puree
1 red pepper, chopped
1 courgette chopped
1/2 onion chopped
put all in saucepan, heat gently til veggies are soft,
blend to a smooth sauce
will post more later but need to breakfast now, waffles anyone???

mmm here's one of my faves! Take 10 mins to cook and tastes delish!
Tagliatelle
tub of Creme fraiche
Strips of Smoked Salmon (you can buy these in small packs, pre-stripped)
Buy whatever portion of above that you need for how many you need!
Cook Tagliatelle in boiling water and drain
Pour Creme Fraiche into a pan with the strips of smoked salmon and stir until just about boiling.
Serve up Tagliatelle and pour on Creme fraiche

I'm trying very hard to remember my mum's Stilton and Onion Soup recipe (aka the Most fattening Soup in the World)
approx 4 onions
7-9oz stilton
slug of brandy (not the mollusc)
approx 150ml or good glassfull of white wine
oil/butter - can't remember how much - enough
sugar
stock of some kind - a litre?
salt and pepper
heat oil and butter in deep pan
fry onions a bit with teaspoon of sugar so they caramelise
add stock
add brandy
add wine
season
simmer for quite a while
add crumbled stilton just before serving
eat with a big smile on your face (but close your mouth when the soup is in it)
I do actually make this myself and it is scrumptious but my mum has never given me a proper recipe because she cooks by taste only (showing off I think) and therefore I have to attempt to do the same. My soup never turns out as nice as hers but it's quite good.
