I thought these comments were especially prescient:

What I am struggling with at the moment is the way New Zealand industries place you in a particular category or give you a specific label and don't see the crossover skills that you can bring

Surely this does not make sense in the context of a country which recognises that it has a huge "brain drain" problem?

Not that practical often to get a job offer remotely, unless occupation is in high demand. However, absolutely look to ensure you're eligible for permanent residence - the normal way is through employer nomination for those New Zealanders with a skilled occupation.

NZ citizens without a skilled occupation or other basis to get permanent residence have more challenges unless they marry an Australian and get residence that way. The Special Category Visa is ok to live with day to day, but not so great for the longer term.
