Also, on the IV-15 & Checklist there's a tick box labeled "Notarized Statement". I'm a bit confused about what that is and if it applies to me.

I beileve it refers to the Statement of Intent that you both wrote to submit with the I-129F. It seems they want you to bring updated, notarized ones to the interview.
