Have to? No. If she provides copies of her income tax returns, rather than tax transcripts, she must provide complete copies as submitted to the IRS. In her circumstances, her tax returns do not include W-2 forms, so they are not, cannot be, required. Same as for anyone who does not have income from employment, or whose income from employment is not reported on a W-2.
One other thing when an income tax return includes foreign earned income - item 13 of the I-864 asks for the sponsor's Total Income, Line 22 on Form 1040. However, foreign earned income is entered as a negative number on Line 21 of the 1040, so the number that needs to be entered for item 13 on the I-864 is Line 22 from the 1040 with the foreign-earned income added back in. This needs to be explained, even though in the end the sponsor's income will be determined to be inadequate.

Speaking of tax returns, my daughter (US citizen) will have her returns from the last three years for her husbands application. She has filed taxes from the UK and has had only UK income for that time, so she has no W2s to include. So does she need to provide transcripts of the returns?

Medical tomorrow. Eek. 
I have used the contact form to ask if my 4 year old can be included on the list of attendees as well as my missus, for my interview, as we will likely have issues with arranging childcare otherwise.
I haven't received an interview date yet, but have all my documents prepared now, which is a relief.

It probably doesn't mean anything but after my email asking for my son and wife to be added to the list, CEAC was updated with today's date.

Wouldn't it be more pleasant for all concerned if neither your wife nor your son attended the interview with you? And no childcare problem.

It went well!
I spent the few hours before the medical looking in shops and whatnot (got a bit bored of this after a while lol).
Went to Knightsbridge 30 minutes early. Filled in a second questionnaire. About 3.10 I had my chest x-ray, waited 50 minutes, then had a chat with the Doc, bloods taken and genital exam. Very thorough, he was a pleasant guy, and when the mental health question came up he asked if (a) I had suicidal thoughts associated with depression - no (b) If I was taking medication - no (c) Asked if I had documentation to prove this and I produced the letter from Occy Health.
So all good! They say they will have the results at the Embassy by Friday. CEAC has updated to today's date, which is interesting too

This morning's went well for me too, similar experience. Although they said I seemed a little anxious and my blood pressure was slightly elevated...couldn't imagine why?!

Spoke with the son-in-law. His interview on the 5th seemed to go about the same as both of yours. He said he thought the doctor was nice enough, and thorough. SIL did have to have 3 different jabs, though, as well as the routine blood draw. I thought we had scoped out his vaccination records pretty well, but he needed 2 plus the flu vaccine. His arm is quite sore and he is feeling a bit lousy the past 2 days. No wonder!
Quick question - SiL can't seem to get to the DS 261. The link keeps taking him back to the DS 260. Am I imagining something here? Does he not need to do the 261?

He doesn't need to do the DS-261 unless he has been specifically notified.
He needs to complete the DS-260 - check his instruction letter which he will have received from the Consulate in London.

Called DoS. No interview scheduled yet, and medical results not yet logged, but it is still early doors. Will check again next week.

Just called DoS too, as CEAC had updated this morning - medical results are logged - I guess that's just the difference between a morning and afternoon appointment!
