Awaiting Green Card - How Long
I was adjusted from a K1 to permament resident on May 8 this year, and
did not have to go through the Conditional status as we had already
been married more than two years. It is now over 3 months since that
AoS interview and issuance of my I-551, but I have no welcome letter
and no green card yet. Has anyone any idea how long it may take?

You don't say how you know the date of issuance of the I-551, but if its been three months and you have yet to actually receive the I-551, then something is definitely wrong.
I would make an InfoPass appointment posthaste and tell them the facts that although 3 months have passed since they issued the I-551, you have yet to receive the I-551. There may be some mistake in the address.
BTW, I have had situations where the I-551 was misaddressed, returned to the CIS and then they mailed it to me at attorney of record.
This is something you should follow up on. It may very well be that the I-551 was lost in the mail.

Here is what CIS website says, what to do if your don’t get the physical GC,( https://egov.immigration.gov/cris/jsps/index.jsp)
"If you were granted permanent resident status or entered the U.S. with an immigrant visa more than 60 days ago and have not received your first permanent resident card, please call 1-800-375-5283"
BTW Don’t forget to post the reason for delay, if any.

I am curious too. My understanding is that if the I-551 was returned to CIS for inability to deliver, they keep it for about 3 months before destroying it and making you process for a new one.
Again, the InfoPass is a good idea. BTW, how do you know that the I-551 was produced and issued? Did you go in on InfoPass before? Curious minds would like to know.

Did you check w/CIS? What happened? What your online status has to say about?
Thank You,
