AOS filing and unemployed status

AOS filing and unemployed status
I am marrying my girlfriend who is a US citizen. She hates her job and is going to quit next month. Therefore, at the time of our filing next month she will be unemployed. However, we are both confident that she can get a job within two months and I can get a job with my EAD in three-five months. Would it be ok for us to file our paperwork and show that we are both unemployed on the Affadavit of Support form? Is it going to affect the outcome of the EAD and AP approval? By the time we get called for our AOS interview we both should have jobs and be able to meet the 125% of poverty line test.
Additionally can a non-relative be a co-sponsor?

It might possibly be rejected due to lack of income.
Yes, a non relative can be a sponsor. They must be a US citizen or
permanent resident.
