It's a bit further west, but the The Thistle in Burlington used serve a good plate of fish and chips with Scottish plain bread & butter. It has been many years since I have eaten there as I am now even further west of Burlington.

One where the owner is there every day, and opens at 11 AM!

Yeah, I've been caught too ... but it's take-out only mostly (there's a couple of tables), and I expect demand really tails off then.

If a cod is caught in the atlantic ocean it is the same cod if being brought back to shore in Canada or the UK. It doesnt change
Shame Canada doesn't catch cod in the Atlantic anymore then, and hasn't for 20 years. All Canadian cod is pacific cod which is a different species, and is why cod is more expensive than haddock. Whereas in the UK most cod is from the Icelandic regions or some from the Irish sea area.

It has a crust only on the top and bottom. There is no crust on the sides due to the unbaked loaves being stuck together in batches, baked together then torn into individual loaves afterwards.

It's quite tall, for a loaf and I would say a little coarser than other bread.

No evidence of Iron Bru in the process.

I see the Auld Yin has already enlightened you as to the Scottish delicacy that is plain bread and not pan bread. I had to introduce HID to plain bread, as being from England he had not tasted such a delight. He is now a firm convert and agrees that it makes the best toast.

Forgot to mention that there is usually some dispute over who gets the "heel end" as they make even better toast.
