A chicken cannot be free range and organic. Free ranging hens has two consequences:
- they, and their eggs, cannot be organic as you can't audit the worms and other random things they eat
- it's not lawful to sell the eggs in Canada except via the "farm gate" exemption.
We free range ours anyway. People from countries where chickens are routinely free ranged will bite our arms off to get the eggs.

You can buy liquid egg white in all the stores.
Bulk Barn also sell a gluten free egg white powder in packages (not just the meringue one)

OK - out of curiosity I just called our supplier (for ice cream ingredients, not specifically egg whites) and they sell egg white powder as follows:
20Kg bag - c$400
Egg white, Citric Acid, Sodium Bicarbonate, Yeast.
Not 100% pure but pretty close - and no real scaries in there!
