We usually bake nice thick halibut steaks. Even here on coast BC, this is a very expensive fish so we have it only at Christmas. Sometimes we have a locally produced ham instead. There's always far too much salt in hams so we poke holes in it and soak it in 7up overnight. It's amazing how much brine you get out. I then bake it in a mixture of beer, molasses and dry mustard.

Going for very slow cooked brisket of beef, possibly in the BBQ (using it as an oven) for three hours or so, with beer and Moroccan spices......

We having the same, feral, grass fed, anti bacterial, Fentanyl free, cross fit, Wi-Fi enabled, Lululemon wearing and Zen Buddhist turkey as Thx Giving but a bit bigger.

Maybe he was wanting this instead of turkey for Christmas menu..

But it works here in a weird way....
Oh and Christmas dinner will probably be Salmon - hawaiian style - garlic, butter, capers
Veg TBD greens fit but I love parsnips so why not!

There's not enough pheasant for a meal for 4 - unless it becomes a 'hearty' (slow cooked) soup and crusty bread which would be very nice but kind of expensive and possibly not much different to the turkey leg version.
I think I'll try to cut the breast off, wrap in bacon and roast while the turkey is resting and make the soup with the rest.
If it's good then the experiment worked and we have a bit of pheasant with the turkey. If it's rubbish, I'll just add it to the soup when I do that.
It'll be an expensive experiment - three times the cost of the turkey
But you only live once.

We will have Christmas Day Dinner in the old folks home, I'm not expecting it to be up to much, as it's not until 5pm Ish, fry up for breakfast and sausage rolls throughout the day. Boxing Day, I'll be roasting a turkey, potatoes, parsnips, carrots along with Brussels and stuffing, there will Tesco Christmas puds, cheese from Cheddar amongst other tasty morsels.
