It wasn't breakfast, but there is a fabulous vegetarian cafe near us, I had lentil & egg curry for lunch the other day. It was delicious. There is just something about curried eggs... yum!!

How much curry powder to mayo? I know I can trial and error but I'm easily put off by getting things too wrong. My SD made some and I could barely taste any curry.

Sorry but I have no idea. I've been making it for so long that I just pour the curry powder straight in from the tin. I understand about being reluctant to make something new without a recipe, I'm exactly the same.

At a rough guess I'd say two heaped teaspoons for 6 eggs, but that is a very rough guess! My mum's curried egg is too mild for me, she must have the same light touch as your SD

The nature and potency of your curry powder is a variable. "Season to taste" I'm sure you'll do alright. I really enjoyed my egg salad sandwiches today, been ages since I've had them.

Don't do it that way you nut! Mash your eggs up, stir in enough mayo to bind them well, then add your salt and curry powder gradually until they're just right.

I forget to eat eggs for ages, and then I'll boil half a dozen and keep them in the fridge for sandwiches, or just to eat on their own.

Lovely grub. I do similar although mine would be curry lite as my tum doesn't take it too well so sometimes I substitute mustard instead.
Those eggs with large leaf watercress in a sandwich is wonderful.

I bow to your experience. I was just thinking that the powder would dissolve/blend better with the mayo on its own rather than with egg included.

Yes, they do. I seem to recall a curry flavoured fruity sauce too. But in the UK.
Canada tends not to do such things though, although there's always Amazon.

The local drugmart has eggs at half the cost of everywhere else at the weekend. I'll get some and experiment.
