Struggling to deal with the waiting... any advice?

I don't mean to be insensitive, but I suggest you just get on with life.
Go to see all the places you and your family would like to have memories of, meet up with the people you won't see any more.
And while you're waiting, de-clutter your life, get your children interested in any hobbies that will help them settle in their new life (like skating or hockey), make connections with people who will be relevant to you in Canada, and build your (realistic) dream.
If we had put our life on hold for the 4+ years it's taken us to go through the process, we would be very sad and lonely people...
