Thanks for all the advice, I'm back in the UK on Sunday after a 6 week holiday here in Alberta. Going to apply for the police check on Monday and prepare the IEC application, hopefully be back in May/June!

Yep, it would give you a year's open work permit, and you can then try and get your employer to apply for a LMO for you so that you can get a 'normal' TWP after that.
No, it won't. It will all be dependent on your job, but if you can get a skilled job (it doesn't have to be a trade, just anything that is Level A, O or B on the NOC Matrix, so that includes most basic office jobs) then you can apply for PR as soon as you have your normal TWP, in any province.

I applied for the ACRO police certificate today.
For the IEC application do I need to list an employer? And if so does there need to be an LMO ?
I searched but couldnt find much information.

I think is based on a open work permit just like bunac, but I'm not sure as my daughter had applied through bunac and got a open work permit
