We are currently going through the process of applying for Permanant Residence in Canada. After a long thought we are thinking it would be more benefical to us to actually go for a Parent/Grandparent Super Visa. Would it be easy to change direction at this last stage.

It depends on what your ultimate goal is. Both have Pro's and Con's but if the ultimate goal is to remain in Canada then PR is the better bet.
As a PR you have the right of entry into Canada and can move around and work if you wish to do so. You would also be covered for the Provincial Health coverage plans dependent on Province residing in.
Most have coverage (limited) to temporary residents i.e Super Visa visitor/work study permit holders.
Super Visa needs to be renewed every 2 years up to a maximum of 10 years. Additional medical coverage gets more expensive the older you get.
PR cards require renewing every 5 years if travelling outside of Canada.
PR allows you to apply for Citizenship if you really wanted it.

What you can access in Canada will depend on the province, where would you be living?
