I have spent hours entering all my information in for my EE pprofile, only to submit it and be told I'm not eligible.
I have my ECA.
I have my language test.
I am a skilled worker, NOC 2253.
I have oodles of work experience at the NOC code.
I have entered sufficient funds.
Three times I have tried now, altering little bits here and there each time it gets kicked back.
Tried contacting CIC to ask what is exactly wrong, been told I've obviously made a mistake somewhere and I need to try again.
Why can't they just tell me where the error is?
This is infuriating.

It might not be an error - you may simply not be eligible to apply.
How were you planning on getting PR (FSW/CEC/PNP?). What is your highest level of education, your age and your IELTS score?
If you can give us a bit more information, then hopefully we can help you figure out what is going wrong.

Completed a 4 year apprenticeship.
ECA states 2 year college diploma, but I had additional year study at college level awarded for an incomplete HND.
Was going FSW.
Age 44
IELTS - Speaking 9, Listening 9, Reading 8, Writing 7.5.
I have also submitted a PNP application, which my future employer is looking at too.
Not had an LMIA yet.

Sorry, the ECA was for my HNC, not my apprenticeship.
HNC was effectively 4 years part time for which I received the 2 year diploma award from ECA.

Ok, so unless there is other info you've not mentioned (i.e. family in Canada or a significant other) then unfortunately you don't seem eligible to apply under EE.
For FSW you don't seem to meet the minimum points score of 67 by my calculations?
24 for language (assuming no French?), 19 for education, 15 for work experience (assuming at least 4 years), and 3 for age = 61.
Six selection factors – Federal skilled workers
So unless I've missed some points, you're simply not eligible to apply for EE and you'll need your nomination cert to then be able to apply under the PNP.
Not great news, but I hope it clarifies it a bit at least.

My wife's language scores are similar to mine, but her education has not been assessed.
I put her education at Secondary level for now as she has done some college courses, but nothing major.

Any other way to get your points up i.e. French?
