We, in Italy don't bother with the whole head anymore. We just leave the horse's teeth on the pillow these days ....... smiling at you when you wake up.

We grill the rest of it. Italians say horse meat is packed full of iron.

That doesn't surprise me. On holiday in Tuscany I got chatting to an Italian gent....he told me his grandfather wouldn't go on holiday anywhere else in the world because he couldn't kill what he was about to eat. He also told me they left the grandad to look after the grandchildrens rabbit once. He said as they said goodbye and closed the door, poor bugs was in the pot and on simmer...
