Hi all,
thank you so much for all your advise. The reason we are thinking about hiring a immigration consultant is that we hope the whole thing may be easier as they should know what to send to whom and when and what it needs to look like...if that makes any sense at all.
But we will definately look into the forms that need to be filled in again and see if it is feasable to do it ourselves. Thanks again everyone, your help is much appreciated.

From our experience, you really need to be over in Canada to get offered a job. We tried sending out enquiries re jobs from the UK with zero success. In the end we went over to Canada for six months and lived off savings. The whole process of getting a positive LMO (Labour Market Opinion) from Service Canada (which you need to get a TWP) can take a few months but finding an employer (who meets all the requirements) and who is willing to go the whole haul on paperwork, advertising, interviewing Canadian Citizens for the job, taking calls from Service Canada etc. Is the real hassle.
Like previous posts, we used the Immigration Consultant (WB) but ended up doing everything ourselves (we also lost quite a bit of money in the process). You may well just be throwing good money for bad.
Which part of Canada are you hoping to settle in? Nova Scotia is beautiful and is in need of immigrants. They have the Community Identified Stream which you may find is a good way to go. If you get a positive referral from the RDA, PR is possible in 6 - 9 months I've been told. Worth looking into further.
Either way, re the TWP it takes a good few months and is definitely not the easy route. Expect a good slog! But as a Chef, your husband is definitely in the right line of work for getting into Canada! Good luck!
