There's nothing really clear on doctor availability.
I've found one chart that shows Nova Scotia has 261 per 100,000 population and that's the highest across Canada. But that chart only goes up to 2015. For that Year Canada was 228, BC 232, Ontario 220, Quebec 242. PEI 181 and NB 222.

But other google results show things like Doctors tending to be in urban areas so the situation can be very different in more rural areas. And some provinces will have more people in rural areas than others.

NS is mentioned as having the longest wait times in Canada despite having more doctors.

Here in NB, four years ago I could mostly get same day appointments or the next day at the latest.
Now I phone and it's more than a three week wait for a telephone appointment and longer for face to face. Same doc.
