chefs at large or large chefs

:scared: I am waiting for my residency so I can start work as a Chef.
As anybody found the huge difference in eating habits between the UK and Canada (Im not talking just Fish and Chips) The amazed looks I get when I start dicussing Things like fried pasta or fusion cooking. Maybe its because I am away from the city of toronto and this sort of cuisine hasnt reached this part of the world yet Where I live there is a mentality of "prime rib and mash" (which I may add is very nice) but not so good 5 days a week
I got a dirty look when I mentioned a double pork chop with a sage butter sauce (buerre blanc) Does this mean I have to move into the city to find work or do I make it my quest to try and get them to try something different
