1 boneless shoulder of lamb
1 good handful fresh coriander
1 tablespoon coriander seeds
1 large natural yoghurt ( plain )
crush coriander seeds ( in pedestal if you have one otherwise roll your
rolling pin over them on the cutting board )
roughly chop up coriander
mix both seeds and coriander into yoghurt
lay out the lamb
open joint out by cutting so that the meats no thicker than 2"
score with a sharp knife
add the yoghurt mix the lamb rub it all over
put the lamb with yoghurt mix in either a bowl or bag and leave in the fridge over night for the marinate to soak into the meat
chop up whatever veggies you like
we use potato, sweet potato, butternut squash,
fennel bulb, onion, peppers red and green, carrots
parsnips and dried apricots
put veggies into a baking tray
( use the thinest one you have to prevent scorching )
drizzle with olive oil and sprinkle with fennel seeds
put the meat in the oven at 200 C
straight onto a wire tray do not cover
cook for 1/2 hr
add tray of veggies below lamb
this lets all the juices and the corriander mix run onto the veggies
and Cook for 3/4 hr
turn the veggies half way through again to prevent the tray scorching them
serve with a light white wine
enjoy
