Mandy
boneless shoulder of lamb
coriander seeds
fresh coriander
pot of plain yoghurt
various veggies
olive oil
fennel seeds
mix yogurt and crushed coriander seeds
spread it all over lamb
throw it in a plastic bag in the fridge for 24 hrs
put into oven on a wire rack at 205 C for 90 minutes
no foil just Lamb marinade and heat
45 minutes later
put veggies in baking tray below lamb
we use
carrots
1x fennel bulb ( chopped into quarters )
small potatoes
onion
sweet potato
parsnip
tomatoes
dried apricots
capsicums ( what ever colour you like )
chop them all up
place on a baking tray
drizzle olive oil over them shake a good table spoon of fennel seeds over
and place below the lamb
that way all the juices drip onto the veggies
really good and dead easy to make
regards
Steve
