From what I know - and just to add here - from my point of view the childminding career would defo be better in Australia! Long story short, I'm an aussie (been in UK foir 3 years), my mum works in childcare, my sister in schools (previously childcare) and my girlfriend is a reception teacher (with experience in childcare). in a lot of places in Australia qualified child care staff (particularly ones capable of managing or assisting to manage a centre) are in high demand and get pretty good money! Also, there appears to be lots of casual work in child care which might help to get you started and settled once your there (if you go!!)

Chef - pick a prestigioius place and he might get in with some great restaurants (Hunter Valley to name but one area)
