Both positions i was offered wanted me to go casual. i refused saying i needed security of a regular set income - didnt seem to be a problem jsut think you need to be prepared to be cheeky and ask...

PP they didnt seem that bothered about the certificates - more interested in the blurb on my cv. You do have to provide your own uniform and knives though -well maybe not everywhere but these two...

Im a cook too apparantly but like you i dont really care as long as it gets me over there.
I have a paper from perth with job section in - there are loads and loads of jobs for cooks/chefs...
