I wish id found this site earlier as Ive applied as head chef I'm now wishing id applied for just chef after reading some of the posts.

i sent of 70 certified documents which included
city and guilds certificates and syllabus
intermediate food hygiene + syllabus
advanced catering management certificate + syllabus BIIAB
basic food hygiene
references from 5 employers
god knows how many menus
craft trainer award level one
reviews from local and national papers and magazines
5 page personal statement
pint out from company house of company's no longer trading
+ more that i can remember
is this enough ??????????????

I'm going over to cairns in 3 weeks for a holiday and also check out job prospects etc but after reading this site getting slightly worried now
can they down grade you as well as upgrade your application???

sorry, dont know too much about chefs. is it the same points?

tony just a point did you put anything in to say you actually learnt to cook ?
i had my first tra rejected because of this but they did say i was classed as a head chef/supervisory chef but had failed to include proof that i had learnt to cook ......
you need to put a progression from leaving school etc and learning to cook and the progression it took over the following years to eventually become a chef then head chef

I did put in some info about training as well as all the positions i took since leaving collage, Ive never been out of a kitchen for 20 years. I think they take the piss a bit over the head chef status.I included all the menus iv worked with and written.Sorry to hear about your assessment bit harsh i think or are they trying to make more money out of people!!!!!!!!!
oh well just wait and see i might see if i can get sponsorship in cairns next month.
Also i don't want to use an agent as you have to get all the info for them and pay them a small fortune
