Same here with the ham. It's my first Christmas over here and Steve's family normally do the ham dinner Christmas eve so I told him I will make a good ol' English turkey dinner on Christmas day! Yummy Yummy!

Actually I'm not over keen on Turkey, I find it abit dry, so usually I try and do chicken and a nice bit of roast beef instead.

Now that I have mastered the art of roast potatoes (cheers everyone), I'm now onto my next project, yorkshire puds.

Hubby likes a nice bit o roast beef for xmas day, but we'll still be having turkey coz old habits die hard and it just wouldnt seem like xmas day without that damn animal cooking for hours n hours.

Gary Rhodes has an excellent Yorkshire pud recipe that works a treat Yosser.

8 oz plain flour
Pinch of salt
3 eggs
1 egg white
300-450 ml milk

Oil, lard or dripping for cooking.

Pre heat the oven to 220 C /425 F/ gas mark 7.

I am using a muffin tray to make the puddings (12) and it is working out fine.

Sift flour and salt, add eggs and egg white, whisk in the milk and mix like crazy. The batter needs to be thick enough to coat the back of a spoon.

If you have the time, make the batter and leave it to stand for 1 - 2 hours, if it looks a bit set when you come to use it add a little milk.

Put a little oil in the base of each muffin holder and put it in the oven to heat, much like the roasties, when the oil is hot add batter to each one and bung them in the oven for about 20- 25 minutes.

Like cake, they can sink if you open the door while you are cooking them so use your oven light to look in and check them.

They are yummy.

We will be having lamb or beef. I am not much of a turkey fan either, but I do love a roast. Yummy!

Prime rib. Although I've said if I eat all the leftovers we should have Turkey again. Roast pots, sprouts, bread sauce, bacon sausages, its not the same without!
Oh yeah, and whats with these damn jello moulds with meat, or is that just my wifes family!

I get the impression that Prime Rib is the favourite for christmas... We had christmas with my in laws last year and this is what they had I think they are also doing the same this year.

Yosser how did you finally decide to cook the roasties? sounds like they turned out OK for you.

We're having the same thing we've had for the last 27 years- Turkey, pork and beef. the first year we were married we couldn't agree whether to have pork or beef to go with the turkey, so ended up having both and we've stuck to it. I'm not a lover of Prime Rib though- too fatty- I get a nice big piece of sirloin from the butchers- tender as anything and twice as tasty.
We're having the usual- roasties, yorkshire pud, mash, sprouts peas and carrots. and all the usual stuff after christmas pud brandy sauce, trifle etc Every year I have to search to find a leg of pork with the skin on though to make crackling- the butcher got me one last year but they are really hard to come by.

Yosser to keep turkey moist- cut big chunks of frozen butter and push them right *under* the skin- double wrap the legs in foil too- stops them drying out and cook low and slow. I cook mine overnight on a very low heat- delicious.

Mary Ann says I should do a traditional English Xmas of Roast Beef. When did we ever have Roast Beef for Xmas ?

I think we will end up having a deli platter ( swelled with leftovers from the wedding on the 22nd no doubt ) shared between all the family here in Va.

Then sit down, share presents & play some Chronology. That is the family party piece lol. Has anyone else ever tried that game ? The idea is that you have to try and work out the date that a famous event happened in history, and decide where in the time line of cards from previous guesses you have made, the event fits in. Bloody infuriating when u get a load of cards with 20th century dates lol.
