Probably the reason why when I order a coffee I have to ask for it 'extra hot' and why I often have to ask for meals in restaurants to be reheated... if I order something hot, I want it hot not 'just' warm!

National Coffee Association of the USA]Your brewer should maintain a water temperature between 195 - 205 degrees Fahrenheit for optimal extraction. Colder water will result in flat, underextracted coffee while water that is too hot will also cause a loss of quality in the taste of the coffee. If you are brewing the coffee manually, let the water come to a full boil, but do not overboil. Turn off the heat source and allow the water to rest a minute before pouring it over the grounds. Brewed coffee should be enjoyed immediately! Pour it into a warmed mug or coffee cup so that it will maintain its temperature as long as possible. Brewed coffee begins to lose its optimal taste moments after brewing so only brew as much coffee as will be consumed immediately. If it will be a few minutes before it will be served, the temperature should be maintained at 180 - 185 degrees Fahrenheit. |

Making coffee with water at 100C is bad though, as it tends to be bitterer than you'd like - some cheap filter machines run too hot and make awful coffee as a result. Usually pouring water from a kettle to cafetiere cools it enough though. </derail> |

As part of one of my classes, I had to read more details about that lawsuit, it became apparent that the temp of the coffee was way too high. It wasn't as frivolous as the general public think it is.
I actually read about that as a statistics thing also. I guess they did a bell curve of coffee temperatures and could show it was way over to the right and outside the spectrum of what could have been considered an expected temparature for coffee compared to D&D, Starbucks, etc, etc. |
