The crosses are what allows water into the sprout that makes it go soggy (thats what the tv told me anyway)

Render some salt pork and then threw in some steamed sprouts and heavy cream...enourmasly unhealthy but fricking amazing

If you're steaming them it shouldn't make much of a difference. Steaming is good because it limits the sprouts' exposure to water (which is what releases the suplherous compounds that some weaker mortals find distateful). The main advantage to boiling in water however is the ability to use the sprout water for gravy purposes, which increases the fart-factor by a healthy degree.

How about nuking them? I suppose that is a little akin to steaming if you put a little water in the bottom as you nuke, but it produces a nice crunchy sprout that can then be quickly sauteed with other ingredients.

I have visions in my mind of Sprout Club being full of the rowdy and smelly side of BE, and then the little petite quiet Peas Club members of BE!!!
