Left over Turkey Idea's please!!

OK Just walked into the kitchen and its still in one piece hardly touched probably due to the fact I bought a 10.8 in the end for 2 of us
and ate to much Chocolate and Cookie's before it came out.
So did you eat all yours? what do you do with the left overs!! any yummie recipes for me and others to try our culinary skills at tomorrow!!

I have not missed meat but the deep fried turkey at our friends house today looked delicious. I also remember turkey curry and stew working well. I guess you just adapt a chicken recipe.

Ooooh, the dreaded annual question. I normally do the following....
* sandwiches
* casserole
* turkey tetrazini
* pot pie
* turkey salad
* turkey soup
* turkey wrap
There's definitely some more I'm sure. These are the ones that come to mind. Look up this site for more suggestions.

Turkey curry .....or a nice turkey Cornish Pastie .......what could be better on a cold a and grey day .....but a thanksgiving inspired pastry wrap

The turkey usually ends up in sandwiches. Go out and buy a few sub rolls and you can have some turkey subs and that will get rid of it pretty quick.
As for the bones and all that, we throw it in a big pot and make some turkey broth for soup which we then add veggies and noodles too. Not bad. Kind of like chicken broth.

RIip off all the good meat with bare hands and set aside.
Throw the rest / bones and all in a good size pot with lots of water and celery, onions salt and pepper. Boil and then simmer for about 3 hours.
Keep the stock, chuck anything that doesn't fit through sieve.
Put the stock back in pot with :-
3 big leaks, chopped
1 onion, chopped
1lb or 2 of carrots
1lb or 2 of turnips
Add turkey meat (dark and white or keep white for sandwhiches)
After an hour add 1ilb or 2 or 3 of pototoes
Cook for 45 mins
Then Add some dumplings (use shortening if you can't find suet - shortening is going to make them very fatty but tasty) - 3 oz's suet/9oz's self raising flour.. pinch salt and enough water to make solid balls!!
20 mins to cook and hey prestio..... LOVELY..

Chop up your left over turkey into bite size pieces serve with rice that is cooked with poultry seasoning, sage, mushroom, onion, celery, garlic and butter. Very nice.

I would substitute turkey for any chicken dish you make. e.g. turkey pot pie, turkey sandwiches, turkey soup, shredded turkey in wraps, coronation turkey, etc.
