I-864 question
I know that to be able to sponsor for an intending immigrant my income needs to be atleast 125% over the legal poverty level. Now my question is that do I have to be over 125% for last year only, or for the past 3 years? Thanks.

Your current income as stated in the employer letter needs to be over 125%. You can be below the 125% limit on older tax returns.

I am pretty sure that your current income is all that really
matters... that is, I don't think they would reject you just because
you hadn't made enough in previous years... It may depend somewhat on
just how close you are to the minimum right now. Like say your only
making 126% of the poverty level, it may be a hard sell if you don't
have some previous years with income that is close to that.
