I've looked for info on drivers license in Missouri. Not finding much of the website!
It states I need insurance to do the road test, but obviously I don't have insurance on my girlfriends car as I, well, don't have a license, and I couldn't get insurance without a license? Does anyone know what to do? Looking to do my tests asap now.

Do you already have a non-US license?
If so, you can get insurance (be added to your girlfriend's insurance).

Yeah, I have my full UK license. Do they accept that? I was just under the impression I need a MO license of some kind to drive etc.

Here in MD I had to 1) take an online sober driving course 2) take an in-person exam based on the course 3) usual eye-sight exam 4) in-person rules of the road multiple-choice exam 5) on-road driving test. We do things properly in MD

None of it was taxing, just took some organisation.
