Countersignature experience on applying UK passport from US

Mine got expired long ago and I now have to apply as First time Adult applicant from the US. I am already having troubles finding people with the right profession that is not related to me to sign for it. I just realized they require not only passport number from the countersignatory but also a color photocopy of their passport. I don't feel comfortable asking such private document from my friend.
If I don't provide the passport info, will my application going to get denied? I was really hoping just by providing their work info as a countersignatory with a letter explaining my countersignatory prefers not to provide passport information would be sufficient.
Unfortunately I don't know anyone that's still hold a valid UK passport at the moment.
Those who needed to find a countersignatory for yourself or your child, did you run into any problems when applying?

My daughter in California was in a similar situation when she decided to renew her passport. She got her boss to be her countersignatory and he had no problem providing a copy of his US passport page. His view was that he handed it over each time he entered the UK and other countries so providing a copy in an application like this was no problem. Given the number of times he had visited the UK he figured they probably had his passport details on record already.
