We couldn't make our first biometrics appointment because we were going to be in England. Our lawyer told us to just turn up at the biometrics office and there was a strong chance that they would just "fit us in".
We didn't follow his advice, and instead requested a re-scheduled appointment once we were back from our holidays. As it was, it only delayed the process by about 2 weeks.
We did confirm when we were there that if we had just turned up on a Tuesday morning we would have been "processed" without an appointment.

I got my fingerprint notice yesterday for 15th Oct in Phoenix.
Unfortunately I will be out of town then, I checked with the office and they said they do walk ins on Wednesday and Saturday, so I went down this morning and was in and out in 40mins
You should probably check with your local office which day you can just rock up.
