Trip itinerary vs ticket stubs

Because I didn't realize I was going to need to keep them for evidence, I only have
the return ticket stub from my last visit to Canada and none of the other stubs. But
I *do* have all of the flight itineraries from each trip (I have those because I keep
them with my credit card reciepts).
Can itineraries be just as suitable as ticket stubs?

Yes. And off hand I would say that because Canada is a neighboring country and accessable by car not having the boarding passes should not be a problem in proving that you have met.
