At the visa interview, she should be careful not to say she's going to take care of the baby when you go back to work, or that sort of thing. Oddly enough, that can be construed as working in the USA if she gets a grumpy/picky officer.

It's enough to just say she's coming to visit and see the new grandchild.

That's good advice. I would also recommend that she mentions "now that she is retired, .... long visits" as a reasons for the visa, AND refers to her home in the UK - something, anything that ties her to the UK, so she doesn't get her B-2 rejected for reasons of trying to live in the US. Examples might include medical treatment on the NHS, other relatives in the UK, not liking the heat/ cold/ humidity etc. (depending on where her family lives), so "not wanting to live there".
