The $500 threshold is just the cut of for whether USCIS needs to see supporting documentation or not. Make sure you keep all the original papers related to this incident and bring them with you when you go to your interview. They may want to see it, or they might not care, but at least you will have the paperwork with you just in case.
At any rate, I seriously doubt that a simple moving violation will prevent you from being naturalized. Declare the incident on your N-400 and move on.

Do I need to get certified copies of those two pages of paper? ($25 each, ouch!)
or those two originals would do?
During naturalization interview, do they keep any papers/evidence, or do they usually just take a look at them and give them back?

Just keep the originals and a photocopy handy. Bring those to your interview. If the officer wants to keep a copy of anything, give him the photocopy.
