Okay... you apparently know what you're talking about, and I guess I know nothing... even though I've worked in IT security in the US for 12 years now - and you only wish you did! Your premise that IT security is an "in demand" job in the US is faulty.

Few thoughts...

If you have managerial responsibility (be that for people or a function, holding budgets etc) then I would certainly speak to your lawyer about pursuing an L1A which is a better path to GC if desired than L1B. If you don't have this, try and get it now so that you do have it by visa time...

Whilst the debate about the US need for specialist IT security staff is interesting, it doesnt matter toooo much to you - your company should be sure sell your specialism within the organisation for an L1. The company lawyers should be all over this.
