Ah, so you're just hesitant to put the shackles back on!
It sounds like it's the new position driving the move, so I don't see any reason not to stick with the L-1 for your initial stretch. If it works out to get the GC petition in before your wife moves over, then that's all well and good, but I wouldn't move heaven and earth to do so. In particular, I would play it very safe in terms of prioritizing all her UK citizenship matters.
By the way, I have friends who have managed to get their sponsoring employer to pay for their spousal GC application. After all, the employer does want to be off the hook for ongoing visa costs/hassles and it's much cheaper than sponsoring an employment-based GC. Definitely worth asking.

Your wife will have to be resident in the USA at the time the I-864 is required.
Since your income will be US based, it can be added to het I-864

Residence is something that has always confused me. More than once I've lived in one country and been paid in another. I've lived in a country where I've never paid taxes. It's very likely that I've made mistakes, I'm sure.
So, for my wife to be resident in the USA, does that preclude residence elsewhere simultaneously?

Residency is one of those words that need context, seems hard to find it used consistently.
